If you really want to be health-conscious, you can skip the ghee, but the chapatis won't be as tasty. If you can't find any ghee, you can substitute olive oil. Even when I'm cooking rice too. The more you knead the more softer the chapatis will be. When you press your finger against the dough, it should leave an impression.
