My version is based on a lightly adapted version of Jeni's Ice Cream Base, with a little less sugar, a little more salt, and the addition of black sesame seeds (of course) and vanilla bean seeds. I had for a very long time the memory of a black sesame ice cream, tasted in a Japanese restaurant in Stockel, and the desire to try to reproduce it. - Pour this to the boiling milk mixture.
- Do constant stirring till mixture reduces and becomes thick creamy like texture.
- If you want to add sugar can add in this stage. Mix well. Switch off.
- Add rose essence and fold. Cool to room temperature.
- Transfer to a container, cover and keep in the freezer for 5-6hours.
- After 6hours take out the mixture, blend, sprinkle few roasted sesame seeds and keep in the freezer again for 8hours or overnight.
- Serve black sesame seeds Ice Cream with any sauce of your choice. Here I served with homemade strawberry sauce. It tastes yum.
