  7. Wait for it to ferment until double its size (around an hour)
  8. Divide both of the dough into two pieces (get 2 white 2 green dough) and roll out
  9. Place one white dough at the bottom, then red bean, then one green dough, then red bean, then one white dough, then one green dough
  10. Cut dough into 6-8 pieces and slash two lines then braid the dough
  11. Ferment again until almost double its size
  12. Bake at 180c or 350F for 20mins

This one for braided raisin buns caught my attention as it is very similar to the Italian Easter Bread that I make at Easter time…a sweet, brioche type bread that I toast for breakfast with. The final product carries a light matcha flavour with small pockets of sweetness from the marbled red bean paste. The crisp of the outer bits provides a nice contrast to it's chewy inside. The overall cake isn't too sweet and is nicely balanced, so please don't be put off by the amount of sugar in it.
